Be mine, mafaldine.
Happy Valentines Day! This recipe is the perfect dish to make for your significant other (or yourself!) to celebrate this love-filled day.
Below is a twist on my spicy pomodoro sauce. Instead of burrata, I stuck with just parmesan cheese but added some chicken broth and cream cheese to give that sauce a more creamy texture. I hope you enjoy!

Ingredients
- Box of cherry tomatoes
- 6 cloves of garlic, minced
- 1/2 to 1 teaspoon of Calabrian chili oil (depends on how spicy you like it! you can also leave this out altogether if you don’t want any spice – it’s SO good with or without it!)
- 3 tablespoons of butter
- 1/4 cup of chicken broth
- 2 tablespoons of cream cheese
- 1/3 cup of parmesan
- Salt & pepper to taste
- Pasta water
- EVOO
Directions
Melt 2 tablespoons of butter and saute garlic on low heat until fragrant. Add whole cherry tomatoes and season with salt. Simmer on medium low until soft. Mash the tomatoes and add 1 tablespoon of butter, Calabrian chili oil and chicken broth. Next, add cream cheese and whisk together. Add parmesan cheese with some pasta water and bring to a simmer. Add salt and pepper to taste.
Add pasta directly to pan al dente and allow it to finish cooking in the sauce. Top with parmesan and red pepper flakes. ENJOY!
